Cheesy Enchiladas

Ingredients:

  • 2 lbs ground beef

  • ½ cup taco mix

  • 1 cup water

  • 2 cups nacho cheese

  • 2 cups shredded cheddar cheese

  • 7-inch burrito shells (flatbread)

  • Oil to coat

Directions:

  1. Brown the meat, drain the grease, and add 1/2 cup of taco mix with 1 cup of water

  2. Mix and reduce until the fluid is gone

  3. Heat soft shells in the microwave for 1 minute so they are pliable

  4. Add a scoop of meat, cheese, and shredded cheese (yes double cheese, because that’s how we like it), roll, and place into a pan

  5. Brush on oil to coat and place in 400F for 10–15 minutes

  6. If you like, take out ½ through the cook time and top with salsa, cheese, or tomato sauce, or all three if you like
