Creton – A Classical French Twist on Pork Pâté
Ingredients:
1 1/2 lbs ground pork
1 cup finely chopped sweet onion
2 tbsp minced garlic
1 tsp kosher salt
1 tsp ground white pepper
1 tsp ground black pepper
1 tsp ground cloves
1 tsp ground allspice
1 tsp ground cinnamon
1 tsp ground nutmeg
1 cup half & half (10% cream)
½ cup bread crumbs
Directions:
In a large pan, add the pork and brown through
Add the onions and garlic, until translucent
Add the remaining spices along with the cream and bread crumbs
Reduce the heat to low, cover, and cook, stirring occasionally (1 hour)\
Then cook uncovered, continuing to stir, until thick
Adjust the seasoning
Transfer to several ramekins about ½ cup each
Pour melted lard to just cover the pork
Cover and refrigerate until well chilled (overnight)
