Mike Callaghan’s Steak
Ingredients:
Beef Tenderloin
Salt
Oil
Seasoning
Directions:
Cut steak into 1 ¾ to 2-inch steaks
Season to preference
Give your steaks about 10 minutes with your chosen season profile as not to bleed the steak out
Heat cast iron pan to rocket hot, set your oven to bake at 500F
Hit your steak with high heat oil and then put your steak into the hot pan for 1 minute and turn
Pop it into the oven and 4-5 minutes aside
Rest your meat under tinfoil on an elevated rack for at least 5 minutes, keeping it out of its juices and preserve the nice crust
Optional: Top with garlic butter/butter sauce
