Steak with “Finicky Bitch” Rub
Ingredients:
3 pork shoulder blades
1 cup brown sugar
¼ cup Morton Tender Quick cure
1 tbsp summer savory
1 tsp granulated garlic
1 tsp granulated onion
½ tsp rosemary
½ tsp fennel seed
½ tsp coarse black pepper
Directions:
Cover steaks with the rub and place in large Ziploc bags
Flip and “massage‟ the steaks every 8 to 12 hours for a day and a half
Rinse them under cold water for 3-4 minutes, then soak in a change of fresh cold water for 15 minutes
Pat dry
Cook and enjoy
