Stuffed Pork Loin
Ingredients for Stuffing:
1 lb of crab meat
Garlic shrimp
Green onion
Old bay spice
Ingredients for Brine:
Salt
Brown sugar
Lemon peel
Orange peel
Garlic
Onion
Directions
Soak loins in brine for 3 hours
Blend all ingredients for stuffing together in a blender
Stuff the chops (use a fish filleting knife to work some nice-sized pockets into the side of the chops and then work in the stuffing)
Secure the openings with some toothpicks and then place on the grill (option: add rub to the outside of the pork loins)
Grill them on the Green Egg/grill at 325F until they reach an internal temperature of just over 140F (about 30 minutes)
Elevate: make a sauce for the chops! Use half a pound of bacon, onions, and garlic
Add in cream cheese and milk to create a thick creamy consistency
Add Pepper and oregano to taste
