Beer & Onion Soup
Ingredients:
10 cups onions
¼ cup butter
1 tbsp flour
Salt and pepper to taste
1 tbsp dijon mustard
500 ml beer
4 cups beef broth
Directions:
Slice onions and fry them in a pan with the butter
Add the flour, salt, pepper, and dijon mustard (sauté for about a minute)
Then add the beer and beef broth and let simmer
Put soup in a bowl with croutons (choose homemade if you like) and then top with cheddar before sticking it under the broiler (let the cheese just start to harden)
