Beer & Onion Soup

Ingredients:

  • 10 cups onions

  • ¼ cup butter

  • 1 tbsp flour

  • Salt and pepper to taste

  • 1 tbsp dijon mustard

  • 500 ml beer

  • 4 cups beef broth

Directions:

  1. Slice onions and fry them in a pan with the butter

  2. Add the flour, salt, pepper, and dijon mustard (sauté for about a minute)

  3. Then add the beer and beef broth and let simmer

  4. Put soup in a bowl with croutons (choose homemade if you like) and then top with cheddar before sticking it under the broiler (let the cheese just start to harden)
